Kid-Friendly Sloppy Joes

Food for thought….

These kid-friendly sloppy joes are one of my favorite meals because they are filled with lean protein and veggies, are made in just one pan, and come together in under 15 minutes.  Plus they are delicious!  Kids love to help make and assemble them, too.  They can help chop the veggies (love this veggie chopper for kids), measure the ingredients and assemble them just how they like them. Enjoy!

Kid-Friendly Sloppy Joes
  1. In a saucepan, sauté carrot, onion and bell pepper in a little olive oil over medium high heat until soft and translucent.
  2. Add ground turkey and begin breaking it into smaller pieces with your spatula or spoon. Continue to cook over medium-high heat until the turkey is cooked through and no longer pink.
  3. Add ketchup, brown sugar, apple cider vinegar, garlic powder and salt/pepper to taste. Stir to combine and break up any larger pieces of turkey.
  4. Turn heat to low and simmer for about 5 minutes to let flavors combine. Adjust salt and pepper to taste.
  5. Serve on buns or open faced on toast and top with pickle slices.

These sloppy joes are great served with crunchy celery sticks and a fruit salad on the side.  We love to have them open faced on whole-wheat toast, on whole-wheat buns, and for little hands – on small buns as sliders!
