Peanut Butter Bars

Food for thought….

The holidays are fast approaching and that means things are about to get busy!! From shopping for friends and family, to holiday programs and parties, everyone is on the go during the holidays. That’s why I love these no bake peanut butter bars that kids (and adults) can grab on their way out door. They are super easy to make, are a great alternative to processed bars and kids love them. Feel free to add in a little ground flaxseed, try them with different nut butter, or top them with a little drizzle of chocolate for an extra special treat!

Instructions
  1. Line an 8×8 pan with parchment paper.
  2. Warm the peanut butter until it thins and reaches an easily spreadable consistency. Then stir in honey (or sweetener) and a dash of salt.
  3. Stir in oats until thoroughly mixed.
  4. Spread the batter evenly into the prepared pan. Using a second sheet of parchment, press down firmly over the entire mixture.
  5. Freeze for about 30 minutes or until they are firm. Then you should be able to cut them into bars with a sharp knife.
  6. Store in the refrigerator for about a week.
  7. Enjoy!
