Pizza Rolls with Veggie Power

Food for thought…

Kids love pizza and I am certainly not above sneaking tons of veggies into it! These pizza rolls are healthy, filling and kids love them. They are perfect for school lunches, as an afterschool snack and freeze well too.

Pizza Rolls with Veggie Power
These are great for back to school lunches and after school snacks. Since they freeze well, you could also make a double batch to pull out as needed.

Instructions
  1. Chop veggies and sauté until soft. Transfer veggies to a blender or food processor and add 1.5 cups pizza sauce. Blend until smooth, adding a more pizza sauce as needed.
  2. Prepare dough as directed. Roll out dough onto a floured surface into a rectangle about ½” thick.
  3. Preheat oven to 400.
  4. Spread desire amount of sauce onto the dough, leaving about half an inch around the edges. Sprinkle with mozzarella (and add pepperoni if you are looking for more protein). Roll the dough into a long log shape and slice into 10-12 slices, a very sharp knife works best.
  5. Place slices into a greased muffin tin and bake for 15-20 minutes.
  6. Serve with any extra veggie packed sauce!
