Quick and Easy Protein Pancakes with Fruit

Food for thought…

I love these pancakes because they pack a protein punch without using any protein powder and are so simple to make. Top them with raspberries, strawberries and/or blueberries and a small drizzle of pure maple syrup and you have a healthy and filling breakfast!

Instructions
  1. Heat griddle or pan over medium high heat. Use nonstick spray if you aren’t using a non-stick pan.
  2. Add all ingredients into a blender or small food processor. Blend until smooth. We love to use our Nutribullet for easy cleanup!
  3. Pour batter onto griddle in desired size pancakes. When bubbles appear on top and start to pop, flip and continue cooking for another few minutes.
  4. Serve with fruit and a small drizzle of pure maple syrup!
