Summertime Pasta Salad for Kids

Food for thought…

Pasta salad is always a kid pleaser and it’s great for hot days when you just don’t want to do much cooking. This kid friendly recipe is full of fiber, protein and healthy fats and is perfect for lunch, dinner or even as a snack. It can also be altered to your child’s tastes and dietary needs. Definitely keep this one on the rotation for summertime!

Summertime Pasta Salad for Kids
This pasta salad is packed with protein and fiber. Use whatever veggies you have on hand or that your child likes. Add protein pasta, chicken or shrimp for an extra protein punch!
Instructions
  1. Cook pasta as directed. Drain and toss with a little EVOO to prevent sticking.
  2. Drain pasta and add to a large bowl. Add edamame, carrots, red pepper.
  3. Drizzle with olive oil and toss. Then add Parmesan cheese and salt to taste and toss again. Top with a little extra Parmesan if needed.
