The holidays are fast approaching and that means things are about to get busy!! From shopping for friends and family, to holiday programs and parties, everyone is on the go during the holidays. That’s why I love these no bake peanut butter bars that kids (and adults) can grab on their way out door. They are super easy to make, are a great alternative to processed bars and kids love them. Feel free to add in a little ground flaxseed, try them with different nut butter, or top them with a little drizzle of chocolate for an extra special treat!

Just about everyone has had the store bought snack mix, but truthfully the homemade version is so much better, and better for you! We’ve lightened up the original recipe by using coconut oil and have reduced the amount of salt – but definitely not the flavor. This is a great snack mix to pack for school or sports and the mix in options are endless.

Quick and Easy Protein Pancakes with Fruit

I love these pancakes because they pack a protein punch without using any protein powder and are so simple to make. Top them with raspberries, strawberries and/or blueberries and a small drizzle of pure maple syrup and you have a healthy and filling breakfast!
