We all know our kiddos love chocolate pudding. Heck, what adult doesn’t? But all that sugar?? Not the best for a healthy brain. Try my version made with my secret weapon… AVOCADOS! Avocados are one of the best brain foods around and it makes such a smooth and delicious pudding that no one will realize all the sugar is missing!  This is seriously so good!

Chocolate Avocado Pudding

ingredients:

  • 2 super ripe avocados
  • ½ cup cocoa powder
  • 1 tsp vanilla
  • 1 tsp instant espresso
  • ¼ cup maple syrup
  • ¼ cup hot water
  • pinch of sea salt
  • whipped topping of choice

How to cook Chocolate Avocado Pudding

  1. Combine all of the ingredients together in a blender or a mini food processor and blend until smooth.
  2. Serve immediately or refrigerate. Top with whipped topping.
  3. Enjoy!!

No-Bake Energy Bites

Peanut Butter Energy Bites | Healthy Treat Recipe

No-Bake Energy Bites are the perfect brain boosting snack, breakfast or even dessert! Packed with protein, fiber and healthy fats, they also are perfect for grab n’ go. Using just a handful of ingredients, they are quick and easy to make and freeze really well. The add-in options are endless; from cranberries and dark chocolate chips, to shredded coconut and almonds there are options to please even the pickiest eaters. My secret ingredient when I make them? Dates! Love the little bit of sweetness they add!

No-Bake Energy Bites

Healthy and delicious, these energy bites are the perfect brain-boosting snack!

ingredients:

  • 1 cup  old fashioned oats
  • 1/3 cup ground flaxseed meal
  • 1 cup peanut butter, or your favorite nut butter
  • 1/4 cup honey 
  • dash vanilla extract 
  • add-in's mini dark chocolate chips, chopped dates, shredded coconut, chopped nuts, dried fruit, etc.

How to cook No-Bake Energy Bites

  1.  Add all ingredients in a large mixing bowl and stir until combined.
  2. Place in refrigerator to chill about 30 minutes. Once chilled, using a cookie scoop or spoon, scoop out mixture (about 1 Tbsp) and then roll into balls. Place on a cookie sheet to freeze until set and then store in freezer as desired.

Chocolate Chip Almond Butter Oatmeal Cookies

 
Espresso Chocolate Chip Cookies | Healthy Treats
 

These Chocolate Chip Almond Butter Oatmeal Cookies are one of my family’s healthy-ish treats! Dairy-free. Gluten-free. No refined sugars. And loaded with good for the brain oats and nut butter. And they taste absolutely delicious. Only downside? They never last long enough!

Ingredients:

1 cup old-fashioned rolled oats (can substitute gluten-free)

½ cup whole wheat flour (can substitute gluten-free or almond)

½ tsp baking soda

½ tsp salt

2 Tbsp vanilla or espresso powder

¾ c almond butter (or any nut butter)

¼ c coconut oil, liquified

½ coconut sugar (or brown sugar)

1 tsp vanilla extract

1 large egg

3 Tbsp non-dairy milk

½ cup dark chocolate chips

 

Instructions:

1)    Preheat oven to 350.  Line a large baking sheet with parchment paper.

2)    In a medium bowl combine oats, flour, baking soda, salt and either powder.  Set aside.

3)    Using an electric or hand mixer, mix together almond butter, softened coconut oil and sugar for about 1 minute until combined.  Add in vanilla and egg.

4)    Add dry ingredients using a spoon to combine. Add in non-dairy milk.

5)    Fold in chocolate chips until evenly combined.  Dough will be thick, slightly sticky and oily feeling.

6)    Use a cookie scoop to scoop dough balls and place on prepared cookie sheet. Leave 2-3 inches between cookies.

7)    Bake cookies for 12 to 15 minutes.  Allow them to cool for 1 minute before removing from the cookie sheet to cool.

8)    Store in an airtight container or refrigerator.
